2 - 4 garlic cloves, pressed
1 2 ounce envelope dry onion soup mix use my onion seasoning mix onion seasoning mix.
3/4 teaspoon dried oregano, crushed
3/4 teaspoon dried thyme, creshed
1 teaspoon salt
1 teaspoon black pepper, freshly ground
2 lbs chuck roast, trimmed of excess fat
1 16 ounce can tomatoes, diced
1 medium onion, chopped

    A very nice change-up for the traditional roast. I did omit the celery as we arent fans of cooked celery. Otherwise, I followed the recipe to the letter and wouldnt change anything the next time I make it. It was soooo tender and after being in the crockpot all day, the flavours blended so well. I will certainly make this again. Thank you for sharing!

    Italian Style Roast, Yet another version of the Italian roast. This is also cooked in the crockpot and is wonderful after a hard day at the office or for a lazy weekend meal. Serve over pasta of your choice with a side salad or steamed veggies for a complete meal. This recipe was printed on the box for my new crocpot., A very nice change-up for the traditional roast. I made a 4 lb roast and one can of tomato paste is enough. Doubled everything else. I added more potatoes and carrots and served with fresh bread and salad. Left out the celery b/c we don’t love it. Smelled really great as it cooked. I don’t have a Crock-Pot so it cooked at 325 for about 5 hours in a deep roasting pan. Adjust the cooking time based on how you like your roast cooked. I added water as it cooked for more gravy as needed. Checked the roast couple of hours. This is an easy dish that you can leave in the oven while you do other tasks, a great Sunday meal.

    In a Small Mixing Bowl, Combine the Tomato Paste Through Pepper.

    Rub Mixture Over the Chuck Roast and Place Roast in Crockpot.

    Add the Remaining Ingredients and Any Leftover Rub; Cover and Cook on Low For 6 to 8 Hours on Low.

    Serve Over Cooked Pasta.

    Please Note: If You Have an Older Crockpot, It May Be Necessary to Cook Roast 8 to 10 Hours. My New Crockpot Cooks in Much Less Time.
