J. L. Hudsons Maurice Salad

    Cuisine:

I made this over the weekend, it was great. I feel like some of the proportions might be off. 3 lbs of meat and cheese seems like a lot for a head of lettuce, used only a quarter of the meat and half the cheese and it was plenty. I really don't remember it being mostly meat.

    J. L. Hudson’s Maurice Salad,Delicious salad served in Hudson’s restaurant. Can use Splenda in place of sugar and low fat mayo.,I made this over the weekend, it was great. I feel like some of the proportions might be off. 3 lbs of meat and cheese seems like a lot for a head of lettuce, used only a quarter of the meat and half the cheese and it was plenty. I really don’t remember it being mostly meat.,I worked at Hudsons in the late 80s and early 90s and had a Maurice Salad almost every day for lunch. I’m wondering if anyone has the recipe for the popover that they served with it? It was very light and fluffy. The ones that I make from other online recipes that I’ve found are thick and too heavy.
