Jim’s Raita,Raitas combine fruits or vegetables with yogurt to provide cooling accompaniments to spicy dishes. In the vegetarian households that traditionally serve raita, it has a double function — it acts as a refresher and a digestive at the same time.,The mint made this different for me. I did add some salt and pepper. I omitted the cumin, as I learned from another recipe that I don’t like cumin with cucumbers. Used strained kefir instead of yogurt.,Oh this was yummy to cool down in the heat of summer. I thought it would need some salt added but is absolutely yum refreshing without. (I made it a second time the next day) DD1 (4 years old) and I devoured this for lunch and then used it with a Indian meal the next time. used vine ripened tomatoes, English cucumber, fresh mint from the garden, Balkan (thick) yogurt, plus the rest of the ingredients.
