Kittencals Thick And Rich Creamy Tomato Soup

Features:
    Cuisine:

This recipe turned out so well, and we both loved it. I made a few substitutions based on what we had on hand: 1) Instead of the 28 oz. can of crushed tomatoes, used 2-14 oz. cans of the Del Monte diced tomatoes with basil and oregano 2) Used 5 tsp. garlic powder vs. fresh garlic cloves because we were out 3) Used half and half instead of milk. 4) Added extra black pepper and also added cayenne pepper for a heat kick. I followed the first instructions like it says, sauteing the onion and oregano in my Instant Pot, then put it on the soup setting for 20 minutes of pressure cooking. After, used the immersion blender to puree it all the way smooth. It was really fast to make too. Maybe 15 minutes of active cooking.

Kittencal’s Thick and Rich Creamy Tomato Soup (Low-Fat Option), This is 100% better than any canned tomato soup! — If you find that the soup is too thick for your liking you may thin out with more tomato juice during cooking if desired, I strongly suggest to use V-8 tomato juice for the best flavor, this soup will only improve in flavor the longer it is cooked and it tastes even better the next day, it also freezes well ——– LOW-FAT OPTION reduce the butter amount or use a healthy alternative such as Smart Balance Butter Blend and use fat-free milk or fat-free half and half, This recipe turned out so well, and we both loved it I made a few substitutions based on what we had on hand: 1) Instead of the 28 oz can of crushed tomatoes, used 2-14 oz cans of the Del Monte diced tomatoes with basil and oregano 2) Used 5 tsp garlic powder vs fresh garlic cloves because we were out 3) Used half and half instead of milk 4) Added extra black pepper and also added cayenne pepper for a heat kick I followed the first instructions like it says, sauteing the onion and oregano in my Instant Pot, then put it on the soup setting for 20 minutes of pressure cooking After, used the immersion blender to puree it all the way smooth It was really fast to make too Maybe 15 minutes of active cooking , I have done this many times, sometimes I don’t have tomato juice in hand so used strained tomatoes and add water, it still turns out wonderful I always leave out the flour I find that it doesn’t need it as it is wonderfully thick just like that
