Laurie’s Low-Carb Meatloaf, I found this recipe when I went on a lo-carb diet. It is one of my favorite meatloaf recipes., I would give this 10 stars if I could!! I don’t usually write reviews, and when I do, I rarely rave, but I am this time! used onion powder I was too lazy to chop and Heinz Sugar-Free ketchup instead of tomato sauce didn’t have any and left out the salt ketchup was salty enough. I had to use 90/10 ground beef because that is what I had on hand, but I don’t recommend that made it a little dry. I put it in a silicone muffin pan in my air fryer at 350 degrees for 20 minutes. My picky teenagers absolutely loved it! They said the next time I make it, they want it on small buns and eat as sliders. They suggested I should put chopped up bacon in it as well…I may have to try that and let you all know how it turns out. This is definitely a keeper!!, Loved, loved, loved this recipe. It was delicious. Reading another review, used Parmesan chips in lieu of the pork rinds. I added onion powder 1/2 tsp. Instead of onions and I formed the mini meatloafs into little pucks with silicone baking cups in a muffin tin. That way clean up was a breeze and I could drain the grease off the meat. I baked 12 of them at 350 degrees for 30 mins. There were no leftovers to put away as we gobbled them all down. Delicious! Thank you.
