Directions
Leek and Potato Soup,I couldn’t find a recipe that looked good and I didn’t want to puree the soup, so I combined 3 recipes and came up with this one. It was delicious which I found hard to believe with so few ingredients. It also came out a nice golden colour.,I usually omit the nutmeg. Any milk or cream can be used, or combination of both. Chicken or vegetable broth also can be added to thin the cream broth. I LOVE this soup also as written.,My Scottish husband loved it. Used 4 cups broth and smoked paprika because I was out of paprika. Also substituted white pepper for the black.

Melt Butter in Pot Over Medium Heat, Saut Leeks For 5 Minutes. |

Whisk in 3 Tbsp Flour and Gradually Whisk in Chicken Broth Stirring Constantly Add Pepper, Basil,Paprika and Nutmeg. |
