Leftover Cooked Oatmeal Muffins, This is a great recipe for using up leftover cooked oatmeal in the fridge! Perfect for breakfast with just a little butter I usually put raisins, cinnamon, nutmeg and cloves in my oatmeal beforehand, which adds a great flavor to the muffins!, I loved it I always make a little extra oatmeal and never reuse it Today I made the muffins for my grandson who is very allergic I changed out the eggs for a ripe banana and changed out half the oil for applesauce used the same timing but it could have used 5 extra minutes , I doubled this recipe and it was terrific used half whole-wheat flour and a quarter cup applesauce because realized at the end I’d forgotten to double the eggs Added a small-diced half of a Granny Smith apple I was worried that they didn’t rise at all, and they needed 26 minutes to lose their soft center But in the end, they are nutritiously dense and delicious
