Leftover Mashed Potato Pancakes

    I have missed my mom's potato pancakes and at 65 FINALLY found a recipe that is spot on. I did not use oil, I made using about a tablespoon of butter in a large OXO non stick skillet. This is a keeper for sure and with some add ons (cheese and bacon?) would make a lovely guest breakfast/brunch recipe as well. Thank you!

    Leftover Mashed Potato Pancakes,This recipe was recently submitted to a news group to which I belong. I think it is very good and hope you like it, too. Preparation time in the kitchen is just a few minutes. When the big meal is through, this is a tasty way to use up the leftover mashed potatoes.,I have missed my mom’s potato pancakes and at 65 FINALLY found a recipe that is spot on. I accidentally added 1 cup of flour! I didn’t realize it until too late! I’ll make these again with the right amount. I guess I was just distracted but they came out okay.

    Mix Mashed Potatoes, Egg, Flour, Salt, Pepper, Garlic, and Any Optional Ingredients, Into Mashed Potatoes.

    Preheat Skillet and Add a Couple of Tablespoons of Crisco Shortening or Oil.
