Leftover Mashed Potato Soup,Great way to use up leftover mashed potatoes. Perfect for a light lunch or serving with sandwiches. Enjoy!,This was a very good soup but it was definitely more a mushroom soup than potato soup. I will make it again to use up mashed potatoes. It was better without the bacon.,I finally made an account to review this soup. I make this very frequently for my lunches at school. I like to double the recipe and put it in tuppawares for the week! It’s one of my favorites. I like to use store-bought microwavable mashed potatoes for convenience, and sometimes add some corn or spinach. Thank you for a great recipe! My boyfriend and I love it.
