2 firm roma tomatoes, diced small
1 tablespoon jalapeno pepper, finely minced (read *note)
2 tablespoons red wine vinegar, to taste
1 1/2 tablespoons of fresh mint, chopped (not dried)
1/2 limes, juice of or 1/2 lemon, juice of
salt, to taste
pepper, to taste
cayenne pepper
mint leaf
lime zest or lemon zest

    Salsa: Combine All Ingredients in a Non-Reactive Serving Bowl, Cover and Let Sit at Least 1 Hour to Marinate.
