Lemon Granola Chicken Salad #RSC,Ready, Set, Cook! Hidden Valley Contest Entry. This recipe is so tasty using slightly sweet granola on chicken breast. It locks in the juices keeping the chicken breast nice and moist. The combination of the other ingredients makes this a dish, your family, will ask you to make over and over again.,Tasty crumb coating! Note to self- don’t substitute plain mayo for dipping the chicken. The thick wet coating doesn’t allow the crumbs to stay crunchy.,I was skeptical over this but fear not its delicious. I made this for my family and we loved loved loved it. The chicken got a nice crunch from the granola and panko. I was worried the granola would make this sweet, but it wasn’t overpowering. Thank you for this really nice salad recipe that is great in the summertime.
