Strawberry Lemon Muffins, I don’t remember where I got this recipe but it’s a winner!, I got 9 moist, flavorful muffins from the recipe Also, after reading Ducky’s review I cut the streusel topping in half and still had enough to do another batch of muffins I did not use the glaze I think that either the glaze or the streusel topping is enough but not both Definately need to use paper liners to prevent sticking In the muffin batter used 1/2 sugar and 1/2 Splenda and reduced the melted butter to 1/4 cup in so doing the batter required extra milk Took these for a staff meeting this a m and everyone loved them Thanks!

Preheat Oven to 375 Degrees. Prepare Muffin Pans. Prepare Streusel and Set Aside. |

in a Bowl, Combine Flour, Sugar, Baking Powder, Cinnamon and Salt. in Another Bowl Combine Milk, Butter and Egg. Stir Dry Mix Into Wet Mix Until Just Combined. Fold in Strawberries and Lemon Peel. Spoon Into Muffin Pans. Sprinkle With Streusel. Bake For 20 to 25 Minutes or Until Done. Remove from Pans. |

For Streusel - Combine First 5 Ingredients. Add the Melted Butter and Stir Until Crumbly. |
