Ingredients

Adjust Servings:
1 iceberg lettuce (or use butter lettuce)
1 avocado, sliced
2 large tomatoes
1 large jicama
1 large bell pepper
1 medium carrot
1 large zucchini (fresh, to avoid bitterness)
1 medium cucumber
1/2 cup celery
1 tablespoon alfalfa sprout (optional)
1 large avocado
1 garlic clove
1/4 cup olive oil

Lettuce Rolls With Jicama And Avocado

    Loved it. Simple fresh flavors. Loved the jicama with the creamy avocado.

    I did use a red pepper, roma tomatoes (just because of less seeds), a seedless cucumber; but none of that changed the flavor of the dish at all.

    Butter lettuce worked great. I love the soft lettuce leaves, but iceberg would of worked fine. I just love how sweet butter lettuce is. The dressing was very nice. Nice time I may add just a touch of wine wine vinegar to the dressing, just to try it. Also, I did try pea shoots on a few. I had some left over I wanted to use up, they also work very well instead of alfalfa sprouts. They were a hit. Kim

    Filling: Washed and Pat Dried Lettuce Leaves. Wash and Peel All Vegetables and Chop Them Finely by Hand.

    Place an Avocado Slice in the Center of Each Lettuce Leaf and Add the Chopped Vegetables (and Alfalfa Sprouts) on Top.

    Roll Them Up and Serve With the Avocado Dressing on Top.

    Dresssing: in a Blender, Blend Avocado, Garlic Clove and Olive Oil Until Smooth. Add Basil Leaves, Lemon Juice and Salt and Blend All the Ingredients Until Creamy.

    Note: Add a Little More of Olive Oil If Necessary, (to Blend the Ingredients Well).

    Serve Avocado Dressing on Top of the Rolls and May Also Be Used as a Dip. Makes 3/4 Cup Approximately.
