I made it for Easter dinner and everyone devoured it They were later pleasantly surprised that it was a skinny version my only question is the recipe calls for one cup of low fat cheese are you saying 1 cup by volume or 1 cup by weight, as in 8 0z used 5 oz, grated it on the smallest shred size on my box grater and had tons of cheese! just wanted to make sure I wasnt’ overdoing it!, My husband agreed to give it a try in place of packaged version and LOVED it used red potatoes and found it runny at first but not after baking used a blend of low-fat mozzarella and cheddar I think the sauted onions were perfect and added flavor Next time I will layer the potatoes in the baking dish and pour the sauce over it for more firm potatoes but it was superb!
