Light Frittata,Nice hot or cold served with a salad. A great way to get the kids to eat an assortment of vegetables. Recipe from Super Foods Ideas (Australia),AMAZING – It’s the first time I’ve made a frittata and I loved it. I substituted some of the veggies for tomatoes and baby spinach and I also added 98% fat free bacon (upon husband’s request) YUM, YUM, YUM. Love this recipe!!,This is so versatile and great tasting! used what I had – lowfat Mexican cheese, vadalia onion, dill and oregano herbs and Bisquick instead of self-rising flour. used about 1/4 cup parmesan cheese on the top. It needed 35 minutes at 350 to be done in my oven. I didn’t have ham so made it vegetarian (kind of) and served grilled sausage with it and some fresh fruit. This is perfect for a luncheon or even brunch. Thanks, Carole in Orlando
