    I made this to go along with the oven fried chicken we were having for dinner. used a reduced carb. elbow macaroni and reduced fat cottage cheese. Next time I will reduce the amount of spinach and mix it in the mac and cheese instead of layering it.

A layer of spinach in the center adds flavor and nutritional value. I often add sliced mushrooms sauted with shallots and thyme and halved cherry tomatoes for added taste and color. Whole grain elbows make it even healthier. Everyone loves this and it freezes well.

    Spray 8" Square Baking Dish With Nonstick Cooking Spray.

    in Small Bowl, Whisk 1/4 Cup of the Milk and Flour Until Smooth.

    in Heavy Medium Saucepan, Heat Remaining 1 1/2 Cups Milk Over Medium Heat Until Steaming.
