Loaded Macadamia Nut Bread,This yummy quick bread is loaded with nuts, coconut and pineapples. Very easy to make and extremely satisfying.,This is the best fruitcake if you really like macadamias, coconut and pineapple. use dried pineapple and unsweetened dried coconut. It is a great replacement for the dreaded boxed fruitcake that no one likes to get at Christmas. I’ll have to try the same method except with dried apricots and pecans. Whenever I can get to the Big Island, I always shop here and buy macadamias from the farm. – I was surprised by the density of this bread…it does not rise at all and is very thin. I was expecting more of a quick bread I guess but should have known better with the little amount of flour. I might try it next time all in one loaf pan instead of dividing it between two. Mine was a bit overbaked at 60 minutes so I think I will reduce the cooking time too. I did use almonds (with your permission) and cut the pineapple chunks in half . So with all that said I do want to say the taste is EXCELLENT! Loved the tropical flavors throughout the bread – the coconut and pineapple – wow just amazing. Made for 123 Hit Wonders.

Preheat Oven to 300*. |

Mix Nuts, Pineapple, and Coconut in Large Bowl. |

Combine Flour, Sugar, Baking Powder, and Salt and Add to Nut Mixture; Mix Well Until Nuts and Fruit Are Completely Coated With Flour. |

Beat Eggs Until Foamy and Add Vanilla to Eggs. |

Pour Egg Mixture Into Dry Mixture and Stir Until Combined. |

Divide Evenly Between Two 9 X 5 Greased Loaf Pans and Bake For 60-70 Minutes or Until Centers Test Done. |

Remove from Pans and Cool Completely on Racks. |
