We found it to have a little too much meat for our liking, and I only used half the chicken and about 1.5 times the cauliflower. But overall it is good. We made it non-dairy by using vegan cream cheese and vegan cheddar cheese. I might make it again and omit the chicken entirely and add some more different veggies. I think something green like spinach would be good in it, and the sweetness of parsnips might be a good addition, too.,i am looking for some southern style diabetic recipes especially side dishes i have changed from white rice to brown rice but its hard to think o any side dishes for him.
