Low Fat Chicken In Coke Gravy Kosher-Meat

    My husband and I debated about how many stars to give, but in the end, since he cooked it, I went with his opinion. It's a good dish, the meat is so tender that it falls off the bone and you can cut it with a fork. However, it came out just kind of bland, and (personal taste here) a little too salty and a little too sweet. The kids liked it more than we did, so we will try it again, but I think next time instead of the onion soup we will try sauteeing chopped onions and using low-sodium chicken broth in addition to some herbs -- sage or rosemary or something -- along with the coke. We used Akikobay's technique modification, since we too don't like cornstarch sauces, but ended up reducing the sauce slightly anyway once the chicken was done. Definitely will try adding onion and either chicken or beef stock next time for additional flavor with less salt.

    Preheat Oven to 430f.

    Place Chicken Quarters in Oven Pan Facing Down. (if There Was Skin, It Would Have Been on Bottom).

    Cover and Seal With Heavy Duty Aluminum Foil.

    Bake For 1 1/2 Hours.

    Take Pan Out and Uncover Aluminum Foil -- Careful! Steam Is Very Hot.

    Flip Over Chicken Quarters.

    Put Back Into Oven (without Aluminum Foil) For Additional 10-15 Minutes Until Chicken Is Nicely Brown as Desired.

    Occasionally Wet Chicken Quarters With the Fluids in the Pan.

    Pour Fluids Into Small Pot and Bring to a Light Gentle Boil.
