Lucy Belle’s Funky Chicken Casserole, This is a recipe from a book My Aunt Debbie gave me The Treasury of White Trash Cooking It does not say what size casserole dish to use Or How many servings it makes You decide , A recipe from the White Trash Cookbook?!?!? Had to try it used an 8×8 inch square pan and a small box of stuffing mix Also, used more like 3 1/2 cups of chix Very tasty and filling DH loved it I didn’t have a problem with it being too dry and the stuffing did come out mushy, but we like that I think this would be an outstanding way to use up Thanksgiving leftovers Thanks for sharing , I’ve made other versions of this dish that turned out much better It was dry and rather uninspired Not a hit at my house at all used a two quart casserole dish and 8 cups of stuffing Maybe that was the trouble, I don’t know I’ll just stick with my own version of this dish

Mix the Stuffing Mix, Water, and Butter Together. |

Put Half of the Mix Into a Casserole Dish. |

Now, Mix the Chicken, Onion, Celery, and Mayonnaise Together. |

Sprinkle With Salt and Pour It in the Dish, on Top of the Bread Mixture. |

Now Combine the Rest of the Stuffing Mixture With the Eggs and Milk and Pour on Top. |

Take Out Casserole 1 Hour Before Baking and Spread Chicken Soup Over the Top. |

Bake This Uncovered at 350 For 40 Minutes. |

Now, Remove the Casserole from the Oven and Coat the Top Heavily With Your Grated Cheese. |

Put It Bake in the Oven For Another 10 Minutes, or Until the Cheese Melts. |
