    I'm not a big fan of cheese so I mellowed the recipe down with low-fat mozzerella cheese and added a clove of roasted garlic and some pepper. Instead of sour cream, used fat free plain yogurt. The results were a great sub for that mashed potato craving.

This makes a great veggie side, and with the cheese, kids will eat it without asking questions.     Cut Cauliflower Into Chunks and Steam or Boil Until Until It Is Very, Very Soft.

    Drain Water.

    Use a Potato Masher to Mash the Cauliflower Until It Is Fairly Smooth (you Can Use a Blender or Food Processor to Get a Very Smooth Result, but I Like to Keep a Little Texture).

    Add Cheese, Sour Cream, and Salt to Taste.
