Maria’s Best Crock Pot Roast, My mother in law makes a mean roast. This is a crock pot version of hers which will have you begging for more!, Wonderful recipe. To me, a roast that basically boils in the crock pot for 6 hours loses a lot of flavor and texture. I like my roasts to stay together long enough to transfer them to a serving platter. So I’m always looking for roast recipes that don’t call for added liquid. This one is the best I’ve found.
I seared it first and then placed it in the crockpot on a “rack” of celery and onion chunks, just to keep off the floor of the crockpot. Added potatoes and carrots after 3 hours. Turned out perfect with plenty of liquid for gravy. Thanks for posting canarygirl!, This is so delicious! I served it with buttermilk and garlic mashed potatoes, peas and butternut squash. I also made a gravy with 1 c beef broth, 2 tbsp flour and 2 tbsp drippings. The meat was a bit dry but tender. With the gravy, it didn’t taste dry at all. I didn’t really taste the bacon, so I will leave it out next time. The flavours that come out are subtle, which surprised me, as I was worried about all that garlic. I look forward to making this again!

Using a Sharp, Thin Knife Like a Boning Knife, Create Deep Holes in the Meat, Inserting the Quartered Pieces of Garlic and Bacon. |

Using a Mortar and Pestle, Mash Garlic and Salt First, Then Add Paprika, Parsley, Olive Oil and Vinegar. |

Put the Roast Into the Crockpot and Cook on Low 7-10 Hours, or Until Done. |
