Mark Bittman’s Hummus, I absolutely adore Mark Bittman’s recipes They are easy They don’t require any hard to find, expensive ingredients and best of all they taste good , I have a question I do not use canned chickpeas I prefer to soak the beans overnight and boil them in the morning Would the measurement for me be the same, still 2 cups of chickpeas?? Thanks, Mark, This is how I make my hummus too! I don’t add the parsley, but other than that it’s dead on Give this a try, you will love it! In my opinion, the cumin is what really makes this delicious!

Put the Chickpeas, Tahini, Plus Oil If You Are Using It, Olive Oil, Garlic, and Lemon Juice in a Food Processor, Sprinkle With Salt and Pepper, and Begin to Process; Add Chickpea Cooking Liquid or Water as Needed to Allow the Machine to Produce a Smooth Puree. |
