Mean Chef’s Apple Brine, I adopted this recipe from Mean Chef Mild brine for turkey, chicken or pork , I’ve been using this brine for over 20 years it’s the best! I’ll never make a Thanksgiving turkey without it Unknown chef , We have brined turkeys in the past but were interested in a new recipe We made our 27 lb turkey by doubling the brine recipe and it came out delicious and juicy The turkey produced the best juices for our homemade gravy than weve ever had Note, we also stuffed the cavity with oranges, fresh sage, apples, and onions Make sure you rinse the bird before cooking! I saw a couple people complain about the skin Yes, it darkened probably because of the sugar in the apple juice, however it created the tastiest skin weve ever had Not good for the diet, but its the holidays! We will be using this same brine for our New Years Day pork tenderloin!
