Mediterranean Lemon Couscous Salad, This is a delicious salad containing all four food groups ( if you use the red kidney beans), Is there anything else you can substitute for the beans besides chickpeas? I’m not a bean fan but would like to have the protein , This salad was so good, used garbanzos instead of the kidney beans, and chopped kalamata olives instead of the pine nuts because the store was out, and a teaspoon of dried oregano because I think the original recipe calls for fresh, but it was perfect! I’d definitely serve it up with some grilled steak or chicken next time
