Mediterranean Lemon Couscous Salad,This is a delicious salad containing all four food groups ( if you use the red kidney beans),Is there anything else you can substitute for the beans besides chickpeas? I’m not a bean fan but would like to have the protein.,This salad was so good, used garbanzos instead of the kidney beans, and chopped kalamata olives instead of the pine nuts because the store was out, and a teaspoon of dried oregano because I think the original recipe calls for fresh, but it was perfect! I’d definitely serve it up with some grilled steak or chicken next time.
