Zucchini Couscous,A very quick and easy side dish. It could also double as the base for a cold salad with the addition of other chopped veggies and oil based dressing!,This was so fast and easy. I had lots of zucchini from the garden and just found another way to use it. The cumin gave it so much interesting flavor and it was ready in no time. Served it to company and they raved about it as well. Thanks.,Need to add more spices next time. It was a bit bland.
