Mexican Charro Beans,Posted by request.,I made this recipe as described it was very tasty, In the Northern Mexico state these would be considered Borracho beens due to the added beer. “You’ll notice that there are two variations to this recipe: charro beans and borracho beans. They’re pretty much the same dish with the exception of one ingredient: dark beer. The Spanish word charro translates to cowboy and refers to these traditional pinto beans cooked with onion, garlic, chilies, and pork”,I must say, I had never had Charro Beans before this last summer. I ordered them in a restaurant in So. Cal and loved them. I wanted to duplicate the recipe and these were spot on! Love them and they are so easy. Will definitely make them again.

Bring the Beans to a Boil in a Large Pot of Water and Cook Over Medium Heat For 1 to 2 Hours Until They Tender but Still Firm. |

Before the Beans Are Done, Fry the Bacon in a Large Skillet Until Halfway Cooked. |

Add Garlic, Tomatoes, Onions, and Green Pepper; Continue Cooking With Bacon Until the Bacon Crisp. |

Add a Can of Beer to Bacon Mixture and Simmer a Few Additional Minutes, or Longer If You Like Your Beans Softer. |
