Mexican Ground Beef Quinoa Skillet, This is an easy weeknight meal my family enjoys. If you like it spicer, you can add tomatoes with chilis., Using the suggestions by other reviewers, I felt comfortable making some changes. used leftover quinoa from another recipe so I didn’t add as much water as the recipe listed. I also added a small can of rotel style tomatoes and a can of green chilis. Ground turkey was my protein. I also added a package of taco seasoning with the cumin. This is wonderful! It was fast to prepare, the flavor was great, and it makes very good leftovers., Wanted to use up quinoa and ground beef. This is a great base recipe. Next time I will add some veggies bell pepper, corn, etc. It looks a little plain, needs some color!! Would be great served with tortilla chips.
