    Mexican Mess (Bean Dip),This isn’t very pretty. You can add another cup of cheese on top if you want and add veggies, guacamole and sour cream to make it more like nacho dip. I personally can eat the whole thing just like it is. Leftovers go well in a soft tortilla.,Yum! Just yum. I mixed in shredded pepper jack cheese and used medium cheddar on top with chopped tomatoes, bottled jalapeno slices, and chopped green onion. Served it at a small party in our backyard, it quickly vanished.,I made this recipe for a small social gathering. used 4 Big Jim Green Chilis that were roasted, peeled, deseeded and chopped. The cheese blend used was shredded Colby-jack. I also added sliced black olives. The results were a good tasting bean dip that quickly disappeared. Thanks for sharing.
