    Out of my three older grandchildren, one is hopelessly picky and would not even try this dish but the other two, even after saying over and over they wouldn't like it, now ask me when I will make it again! This recipe will go somewhere safe so I can make it again and again. In my opinion, it is so much better than Spanish rice. Thanks for sharing!! UPDATE March 4, 2016 2nd time I made this I tried to stretch it to feed a lot of people. I doubled it and added more rice and green enchilada sauce to moisten it.

    Mexican Rice,Southern Living; this is atypical. More creamy, cheesy than spicy tomatoey. I serve it with my sloppy-gloppy chicken enchiladas.,Out of my three older grandchildren, one is hopelessly picky and would not even try this dish but the other two, even after saying over and over they wouldn’t like it, now ask me when I will make it again!
