Microwave Polenta for Two,This recipe is so fast and easy you can serve polenta as a side dish any time. When it is done cooking, you can swirl in one or more additional flavor builders such as a tablespoon of butter, a tablespoon or two of parmesan cheese, chopped chives, fresh-ground pepper, or a tablespoon or two of half-and-half. This makes two generous servings with no leftovers.,I just uncovered my partial bag of polenta, and decided this was a good day for hot cereal-didn’t hurt that there was a recipe for that on the bag. It made 4 servings on the stovetop, and I only wanted 1 serving, and didn’t want to make a mess in a saucepan, or fry polenta slices for the next several days, and the freezer is FULL, so I googled microwave polenta and checked this recipe out. It cooked in 4 minutes and I did 1 cup water to 1/4 cup polenta. It was a bit thick, so next time I may add a bit more water, or milk. I have a 900 Watt microwave, btw. This is a really easy recipe, especially for someone who has never cooked it before, and you can have it ready very easily even at the last minute, and it’s GOOD.,For the “1/2 cup polenta”, is that just cornmeal?
