Milk-Free, Egg-Free Pancakes,My oldest daughter was severely allergic to milk for three+ years, then *poof* the allergy ceased to exist in her system. While she had this allergy, we struggled with Milk-Free recipes/food. I began making nearly everything from scratch. I bought a really great book, The Milk-Free Kitchen, where this recipe is from. We still make these soft, fluffy and delicious pancakes. I will also post the recipe for Milk-Free Blueberry Pancakes.,I was looking for a recipe without eggs or milk because we ran out and no one felt like going to the grocery. I had promised my Godson we would make pancakes if he had a good day at school and this recipe helped me keep my promise and they were absolutely delicious! I tripled the recipe so I can freeze some for him. He is a pancake aficionado and he made a tiny one to test the recipe and loved it.,I really enjoyed these pancakes. Thank you for the recipe. Its so hard to find dairy free and egg free meals!
