Millet Patties, A flavorful combination with millet, a healthy whole grain of African/Asian origin used a rice cooker to prep the millet which was easy as pie The vegetables were chopped in a food processor [3 1/2 cups of millet is the amount resulting from cooking my 3/4 cup of raw millet as listed ], These were an unexpectedly big hit in household of meat eaters 🙂 used gluten free bread crumbs and celeriac because I forgot to purchase celery stalks And I wasn’t sure if roasted red pepper meant pepper from a jar or freshly roasted pepper, so I went with a freshly oven roasted red pepper, and it turned out great Originally I planned on serving these with cashew gravy but decided for tomato-vegetable sauce Thanks for sharing this yummy recipe!

Place 3/4 Cup Raw Millet in a Saucepan With 2 Cups of Water (or Use a Rice Cooker). |

Simmer Until Water Is Absorbed, Fluff and Allow to Cool. |

Add All Ingredients and 1/2 Cup Breadcrumbs to the Millet and Mix. |

Form Into Patties and Press Into Remaining Breadcrumbs to Coat. |

Place on Parchment Paper or Silpat on a Baking Sheet. |

Cook in 400 Degree Oven For 20-25 Minutes Until Crisp. |
