2 slices bacon, diced
1/4 cup onion, diced
1 teaspoon garlic, minced
1/2 lb ground sirloin (can combine with ground turkey, chicken or pork)
1/4 cup breadcrumbs, dry (panko nice)
2 tablespoons parsley, minced
1/2 teaspoon paprika
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 egg, beaten

    Preheat Oven to 400f.

    Use Silpat in a Baking Pan With a Lip or Oil a Broiler Pan.

    Cook Bacon in a Skillet Until Just Starting to Crisp, About 4 Minutes. Remove and Set Aside on a Paper Towel.

    Leave 1 Tbs Dripping in Skillet.

    Saute Onion in That Skillet Over Medium Heat Until Softened, About 3 Minutes.

    Add Garlic and Cook Another Minute.

    Combine Ground Meat, Bacon, Onions, Bread Crumbs, Parley, Paprika, Salt and Pepper in a Large Bowl.

    Stir in Beaten Egg.

    Form Into 1 Inch Meatballs and Place on Your Prepared Pan.

    Bake Until Fully Cooked, About 10 Minutes.
