Mini Cherry Cheesecakes with Vanilla Wafer Crusts,These are delicious little cheesecakes, perfect for any occasion. Experiment with different toppings instead of cherry if you like.,My bottoms came out a little burned. What did I do wrong?? 375 for 15 minutes. They were not on the bottom shelf. I put the on the 3rd rack to prevent from burning.,I have used this recipe for years and they are always wonderful. My husband is diabetic so I make them with Splenda blend. I think the texture is slightly better with all sugar but he likes these.
