    Mini Frittatas – Giada De Laurentiis,These baby frittatas are wonderful for breakfast, brunch, or appetizers. They can be served warm but are delicious served at room temperature. From Giada D.,I’m guessing the first step is to mix all the ingredients together, or do we turn the oven on and prepare the muffin tins first? What’s the best way to mix the ingredients, blender, mixer?,This recipe is amazing and very versatile. I have used peppered bacon and also roasted veggies as an emergency sub. With the roasted veggies I added a sharp cheese a well. The only thing I have ever done that didn’t work as well was use whole milk. I usually use evaporated whole milk, my secret go to for anything that calls for heavy cream or milk or actual heavy cream if I have it. I have never gotten 40 frittatas out of this recipe, and needed to use a portion 1/4 measuring cup to make the portions come out even. My pan may have been bigger than the recipe was calling for, I am not sure about that. There are different sizes of mini muffin pans.

    Preheat Oven to 375 Degrees.

    Spray Two Mini Non-Stick Muffin Tins (each With 24 Cups) With Nonstick Spray.

    Fill Prepared Cups Almost to the Tops With Egg Mixture.

    Bake Until Eggs Puff and Are Just Set in Center, About 8-10 Minutes.

    Using a Rubber Spatula, Loosen Frittatas from the Cups and Slide Onto a Platter.
