Moist Lemon/Orange Zucchini Muffins, Lovely moist muffins using up some of the millions of Zucchini that keep popping up , These are fantastic! I only had one small zucchini so I managed to get a cup out of it I added a couple of TBS of vanilla yogurt to make up the moisture I also added both lemon and orange zest and a little ginger along with the nutmeg I just ate one and it’s very good but am going to make a lemon orange glaze to kick it up a notch! Thanks for a gr8 recipe!!, Maybe they cooked just a little bit too much but they’re still yummy They’re too golden, but inside they’re moist Since I don’t like nutmeg, used cinnamon and a little bit more used half canola oil and half unsweetened applesauce used only 1/3 cup of sugar My son wanted to have a muffin for a snack at school He likes zucchini muffins and he likes yours 🙂 Thanks Bergy 🙂 Made for all you can cook buffet
