Mombasa Pumpkin Dessert, A dessert from Kenya You may want to add the sugar gradually and adjust to your taste NOTE: A medium-sized (4-pound) sugar pumpkin should yield about 1 1/2 cups of mashed pumpkin , Loved it! I chose this recipe to use for the ZWT Dessert challenge which required a sugar substitute used an equivalent amount of ground dried dates (put through my mini food processor), but that didn’t get it quite sweet enough so I added a tablespoon of honey and few tablespoons of pineapple juice too Topped with diced peanuts, it was delicious!
