1 onion, chopped
1 bell pepper, chopped
16 ounces pasta sauce
16 ounces rigatoni pasta, cooked
16 ounces grated lowfat mozzarella cheese, divided
1 (10 ounce) package frozen spinach, thawed and drained
8 ounces cottage cheese
1 egg
1/4 teaspoon kosher salt
1 (2 1/4 ounce) can sliced olives (optional)
2 ounces pepperoni slices (optional)
3 chopped mixed mushrooms (optional)

    Preheat Oven to 350 Degrees.

    Brown Beef in Skillet With Garlic and Onions; Drain Fat. Add Tomato Sauce and Bell Pepper, Simmer For 5 Minutes. Stir in Cooked Noodles. Spread in Bottom of 9 X 13 Casserole Dish. Cover With 12 Ounces Grated Cheese.

    Mix Together Spinach, Cottage Cheese, Egg and Salt. Spoon Over Top of Casserole. Top With Remaining Cheese and (optional) Olives, Mushrooms and Pepperoni.

    Bake at 350 Degrees For 20-25 Minutes or Until Bubbly in Center.
