Mom’s Pork Casserole, My mom has been making this since I was a kid She says she made it up with ingredients on hand To me it is one of my favorite comfort foods! I adjusted the number of servings based on other comments and the fact that we usually at best serve 4 with it! I will also add as one reviewer noted, the amounts for celery, peas, onion are what my mom used I often am pretty liberal with all of those , It tastes good, I just think it should be more rice, We really loved this I had a pork rib crown roast and had quite a bit left over My husband suggested Parma on the top before baking and it was great The only sub I made was for the soup – I always have cream of mushroom soup but for whatever reason I didn’t grrr anyway I did have a jar of good Alfredo sauce and it was amazing Thanks for this one
