Moonstruck Eggs,In response to a request for a recipe similar to one made in the movie “Moonstruck,” I typed this up from memory. The measurements are all estimated, so by all means, feel free to experiment. You may substitute bottled roasted peppers if you like, adding them after the onions are almost done cooking. Roasting the fresh peppers takes about 10-15 minutes – the eggs only take about 5,Occasionally add some cooked potatoes and a shot of tabasco to spice things up a little.,We make “one-eyes” all the time too, but I’ve never thought of serving them with peppers and onions. They add nice sharp flavor to an otherwise dull breakfast.
