Sweet Potato Tagine, Serve with couscous mixed with a little lemon juice, parsley and olive oil , Yum yum yum! I made this recipe first time for a party and it was absolutely awesome! Doubled the recipe and added some dates along with the apricots Unfortunately I didn’t have any preserved lemons, but I would add them next time to balance out some of the sweeter notes of this dish I also added some whole hard-boiled eggs near the end of cooking This sat on the stove on low for a while before we ate, and it still got rave reviews from everyone Thanks so much for a great vegetarian main dish!, Serve with couscous mixed with a little lemon juice, parsley and olive oil

Heat a Large, Deep Frying Pan With a Lid Until Hot. Add the Olive Oil, Onions and Garlic and Cook For 2-3 Minutes. |

Add All the Remaining Ingredients, Except the Cilantro, Stir Well and Bring the Mixture to a Simmer. |

Chop the Cilantro Stalks, Reserving the Leaves For Later, and Add the Stalks to the Pan. |

Reduce the Heat, Cover With a Lid, and Simmer For 15-20 Minutes, or Until the Sweet Potato Is Just Tender. |
