Taco Chicken, something my DS and I put together recently, it is Great for leftover chichen , Super easy for a weeknight and all cooked in the one pot, great for those nights when your going to be late home, I also added mushrooms and used a jar of salsa with one tin plain tomatoes and used brown rice as that’s all I had A keeper for my crock pot cookbook Thanks for posting!, I halved this recipe, as it was just the two of us eating I couldn’t find Mexican tomatoes, so I improvised, using a tin of regular tomatoes and adding some diced red onion, garlic powder, and some diced nacho jalapenos I also subbed red pepper for the celery, as I didn’t have any I did add a little extra water near the end of cooking, as it was drying up and the rice wasn’t quite cooked I did however, end up over-cooking it slightly This was really delicious, I loved the taco flavour, and the spice from the jalapeno was just right DH and I both loved it DH wanted tacos, so we actually used this mixture in the shells and topped with cheese-they were completely awesome, and we demolished them with real gusto!! DH wants to make it again and put it into burritos next time!!Thanks Doug another great recipe from your collection
