    I made this tonight and it was a big success. I wanted more veggies in it, so I chopped up some eggplant and a bell pepper and sauteed them with the onions and some garlic powder and paprika. I mixed together the macaroni, tomatoes and water in the dish, then topped with the veggies combined with one cup of cheese. I put a lid on for 50 minutes and then topped with breadcrumbs and Parmesan cheese for the last 15. Everyone loved it and had seconds. I'd definitely make it again.

I’d definitely make it again., This is a recipe I’ve had since I was married in 1973. It was the only recipe that would compete with Kraft Dinner, that my boys wanted to eat. That’s saying something I think. Its got a clean fresh taste, and they welcomed it as a tasty alternative that measured up. It can be adapted depending on the veggies you have to use up. It also is very economical, for the budget conscious homemaker in tough times.

    Heat Butter, Saute Onions Until Transparent.
