Mushroom, Tomato and Onion Saute, One of my husband’s recipes Goes great with just about anything and easy to prepare Using a large cast iron pan is preferable but a non-stick will suffice , This is really good although I tweaked it a bit and put it on a sandwich I only cooked for myself so used half of a tomato, half an onion and two mushrooms I added a little bit of crushed red pepper, parsley, about half a clove of garlic and some salt and pepper I also took two slices of ciabatta bread and toasted it in the oven at 375 with a couple slices of provolone and turkey breast on it I added the sauted mixture to the sandwich and it was pretty good Next time I might make a sweet sauce to put on the sandwich too I’ll definitely make this again , I did this just for me instead of for other people so the portions were smaller I did 3 large mushrooms, a half an onion, and a half of tomato seeded and diced I carmalized the onions for about 10 minutes, added the mushrooms for 5, and added the tomatoes for 5 then put a veggie burger in to cook with it to get some of the flavorings I did this for about 5-6 minutes Then I took the veggie burger out and put a dash of whipping cream in it and some grated parmigiana cheese to make it more saucy This only takes like 30 seconds to make and it was delicious!
