1 cup spicy marinated green olives, sliced
1 small cucumber, peeled and chopped
1 vidalia onion, thinly sliced and diced
1/4 cup parmesan cheese, shredded
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup zesty italian salad dressing (optional)
4 leaves lettuce

    Everything goes together wonderfully in this salad, but the slightly pickled cucumbers are the real pleasant surprise here. I also liked how the veggies give off their own juices and flavor to the dressing. used a vinaigrette heavy on the vinegar, since that is the way we like it - I would imagine that you just need to use a vinaigrette that you like. I did try some with feta too as others did, and I think it was even better that way.

    Ed’s Salad, My son and I came up with this dish It’s quick, easy and tastes great we have it at least once a week as a side dish , Everything goes together wonderfully in this salad, but the slightly pickled cucumbers are the real pleasant surprise here I also liked how the veggies give off their own juices and flavor to the dressing used a vinaigrette heavy on the vinegar, since that is the way we like it – I would imagine that you just need to use a vinaigrette that you like I did try some with feta too as others did, and I think it was even better that way

    *you May Substitute Italian Salad Dressing For Tomato & Basil, Tomato & Oregano, Greek or Balsamic Vinegar Dressings).
