Ed’s Salad,My son and I came up with this dish. It’s quick, easy and tastes great…we have it at least once a week as a side dish.,Everything goes together wonderfully in this salad, but the slightly pickled cucumbers are the real pleasant surprise here. I also liked how the veggies give off their own juices and flavor to the dressing. used a vinaigrette heavy on the vinegar, since that is the way we like it – I would imagine that you just need to use a vinaigrette that you like. I did try some with feta too as others did, and I think it was even better that way.
