Noodles with Creamed Broccoli Sauce,Green comfort food!,I make the same recipe only use 1 cup shredded cheddar and 1/4 cup parmesan. I will have to try it with mozarella. (I would have given this 5 stars, but hubby isn’t too fond of it *there’s no meat !*. Must be a guy thing.,I let my 10yo picky eater choose something for dinner, and this is what he found. It was pretty quick and easy to make, and we all enjoyed it. I made it exactly as posted, except that used Barilla Plus rotini instead of regular noodles, and I had to use ricotta instead of the cream-style cottage cheese (the texture of which my husband didn’t enjoy, but the rest of us didn’t mind it at all). For my family, I would use more garlic next time. It also needed a bit more salt, but this is probably because we used unsalted butter. I am tempted to try to lighten it up a bit if we are going to eat it regularly (and we are). I’d use less butter and cheese, and more broccoli. I’ll post here after I try it again with and update.

Cook Noodles in a Large Pot of Boiling Salted Water, 12-15 Minutes. |

in a Dutch Oven Saut the Onion in the Butter Until Soft. |

Add the Broccoli and Cook, Stirring Until the Broccoli Is Tender, but Still Firm. |

Stir in Flour and Add Milk, Mixing Thoroughly. |

Add Cottage Cheese and Simmer Uncovered For 5 Minutes. |
