Directions
North African Spiced Chicken, From Bobby Flay, these chicken breasts are rubbed with an African-inspired spice blend and grilled., used boneless, skinless chicken thighs and cooked them in the oven too much snow piled up to get to the gas grill. I cooked them at 425 for 25 minutes, then put them under the broiler for 2 1/2 minutes to brown the spice topping, which turned out to be just right. Good combination of spices but the recipe called for way too much salt for my taste. I would def make it again but would use 1/3 or perhaps 1/2 the amount of salt the recipe calls for.

Combine All the Spices in a Small Bowl. Brush Both Sides of Fish Fillets or Chicken Breasts With Oil. Rub 1 Side of the Chicken Breasts With the Rub and Grill, Rub Side Down, Until Golden Brown and a Crust Has Formed, About 4 Minutes. Flip Over and Continue Cooking For 3 to 5 Minutes. |
